Jaggery making

Jaggery making (In telugu: Ganuga aadatam) is a long process for the forming community and the duration involves very long hard working days but lot of fun is possible as many folks will be working.

Normally, the work involves: Cutting sugar cane, moving them from field to prep place, cleaning canes, crushing them through Crusher machine, moving cane juice to storage tank which is in the process of heating the juice, boiling pawn, making the jaggery to shapes, drying them, transporting them to home and keeping them in storage room.

I spent many years working this (Ganuga aadatam) which is normally 30 to 50 days, yearly once, starts in Feb / Mar time frame of the year.

Olden days, sugar cane was crushing using crushers powered by Oxes and later crushers were run using Diesel oil or Electricity.

Eating stages of Jaggery process: Sugarcane, Juice, Paaku (when it is 70% completion), Lakkili (when it is ~90% completion), Jaggery.
